Meatballs: Lamb, Gluten-Free Bread Crumbs & Feta

About a year ago my husband and I decided to make pasta and pick up meatballs at the store to save us some time - well this decision ended up being a mistake because meatballs have wheat in them! I got very sick and vowed to probably never eat another meatball again. This mindset was before I fell in love with cooking and so recently I decided that the only solution was to make meatballs for myself!

I love lamb so that is what I used in this recipe but I think ground beef or turkey would substitute just fine. The first task was to find gluten free-bread crumbs to help hold the meatballs together as well as add some flavor.

Lucky for me I found some bread crumbs very easily at Sprouts! I also used fresh herbs from the garden in as well as fresh garlic cloves. Making the meatballs was incredibly easy and extremely delicious so I definitely recommend trying out this recipe. The benefit of having meatballs with pasta is the added protein and I definitely try to get protein with every meal!

Recipe:

6 ounces of ground lamb

a packet of gluten-free bread crumbs

2 cloves of garlic

fresh herbs of your choice (I used oregano)

salt & pepper

olive oil

feta (or another cheese of your choice)

First I poured about a cup of the bread crumbs in a bowl and mixed with 2 tablespoons of olive oil, chopped garlic, herbs and of then feta. I used my hands to mix everything together until it smelled delicious and the oil was properly proportioned.

Next I took the ground lamb and then poured the crumbs over it mixing it thoroughly until I felt like the lamb was covered in bread crumbs and it was evenly spread. Then I took small handfuls of the lamb and rolled them into a ball and placed on a baking sheet. I added a little extra bread crumbs and feta right on top of the meatballs for extra flavor.

I baked the meatballs at 425 degrees for 40 minutes. I would suggest picking a meatball that you don't care being cut in half and periodically cutting into it to check that it is cooked all the way through. I also tried to make the meatballs a similar size to make sure they cooked through at the same time.

The meatballs turned out delicious and were easy to pair with a gluten-free pasta! I highly recommend trying out this recipe for yourself to see how easy it is to have a delicious and healthy dinner!

I also thought that these meatballs might be a good appetizer around the holidays that could be served by themselves or with some type of dipping sauce!
