Thank Goodness For the Irish and Their Potatoes..

Potatoes are a poor man's food, really they are; potatoes are cheap, they are filling and there is numerous ways of consuming such a versatile food. When I think about what I am thankful for with regards to the Irish I think of Guinness and potatoes. For now, let's talk about the potatoes.

Potatoes come in all shapes, sizes and colors which I think is incredible because that means you can do SO much with them. I personally always make my mashed potatoes with gold potatoes and I like my hashbrowns made from brown or red potatoes. For a simple side that is sure to blow your taste buds away without making a dent in your wallet I present to you a simple potato hash.

Take some small red potatoes and drizzle olive oil over a baking pan of your choice. Cut the small potatoes in half and throw them in the pan. I love bell peppers and can hardly make anything without them so I chopped up red bell peppers, green bell peppers and onions to mix in with the potatoes. I also put fresh oregano from my herb garden in this and threw on a dash of pepper. After mixing this up with a spoon I drizzled more oil (maybe 1 tbsp) over it and put this in the over to bake for 15 minutes set at 425 degrees.

I like to get the bell peppers crispy so I don't cover it for the first 15 minutes, but after the peppers are crispy I cover this with foil and let it bake for another 45 minutes.

After an hour of baking stick a fork into the potatoes to see if they fall apart. If not then continue cooking in 10 minute increments. Feel free to add more oil if you want more moisture in your potatoes.
