Homemade Salsa & Guacamole: A Necessity When You Live in Texas

I have lived in Texas for the majority of my life and there is nothing more comforting to me than some good old Tex-mex. I used my vitamix every single day and making salsa with the vitamix was quick, easy and very little clean-up, which is exactly how I prefer my food adventures to be.
I like fresh roma tomatoes, poblano, onions, garlic, fresh cilantro and lime in my salsa but there are SO many variations you could do!

My salsa contained:
3 chopped roma tomatoes (uncooked)
1/2 poblano pepper (uncooked)
1/2 cup of chopped onion
1 clove of garlic
handful of fresh cilantro
2 tbsp of lime
I chopped up everything and put in the vitamix for 15 seconds and after that poured it into a container to let it soak in the refridgerator for about an hour. The flavor was very refreshing and crisp.


What I like to do for guacamole is to take 2 large avocados, mash them up,
sprinkle fresh lime juice in it, mix in cilantro and them put in chopped onion and garlic. Besides being incredibly easy, this guacamole tastes so fresh and flavorful! You could add tomatoes too if you like. These two recipes are 100% clean-eating but of course the chips we ate with it weren't. I look for chips that have the least amount of sodium as well as 100% corn. Life isn't always about eating the healthiest and never having fun, it's about finding ways to have fun while living in moderation.
