Shakeology Pie (without the crust)

Beachbody does a wonderful job of putting recipes out there for Shakeology and usually I really enjoy them...but this time was a little different. I don't know if I am just not used to the unique taste tofu might have but I learned that putting tofu into my Shakeology pie wasn't something I enjoyed.

The image above was the recipe I used for my pie, and I think next time I make it I would probably prefer to use greek yogurt instead! Sometimes trying a recipe and having it not come out as well as you liked is a good thing because it helps you identify what you do and don't like. I thought the texture was absolutely perfect after I had it in the freezer for a few hours and would STRONGLY recommend making this with yogurt instead of tofu.
I didn't use a crust because I am gluten-free but I think that this would be a perfect recipe for taking to a party or a get together because it was simple, cheap and very healthy.
You could also modify this recipe by forgoing the idea of freezing it and have a Shakeology pudding! Also for my version of this I added 2 cups of milk instead of 2 tbsp (tofu was super absorbent) and sprinkled coconut flakes on top.
